Kuri-fuku-gaki (ๆ ็ฆๆฟ, "chestnut-blessed persimmon") is a refined Japanese autumn sweet (wagashi). A whole Ichida-gaki โ a prized semi-dried persimmon โ is opened and filled with kuri-kinton, a silky mashed sweet-chestnut paste. The result is naturally sweet, jammy, and delicately chestnutty, with no need for heavy sugar.
